On-Line Fat and Water Content of Butter Measured by Process 1H NMR

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Water and Fat content of butter can readily be obtained from the on-line NMR measurement. Investigations are currently underway to determine if salt content can be modeled from the absolute intensity data of the NMR spectrometer. Monitoring of the absolute 23Na NMR signal would allow salt content to be calculated.  However this assumes that salt content tracks sodium salt content. 

Placing an NMR on the evaporator train may also allow the measurements to produce value to the dairy by controlling the evaportaion process and feed forward control to the churn.
